Certified organic and Biodyvin biodynamic. 30-year-old vines on granite. Fermented and aged in cement and glass tanks, on lees for nine months. RS <1 g/l.
On the nose, composed, restrained, buttoned down. But on the palate … there is lots of excitement under those buttons. A powder keg of minerality and intensity. If it was possible to examine the flavour and feel of this wine under a microscope, it would be granite and gabbro. Light-shafting crystals interlocked; spliced with acidity; glittering with minerality. And then, floating over the top, spring flowers. Quite special. No hurry to drink. (TC)
