Druiven afkomstig van het perceel “Les Boucherottes”. De druiven worden langzaam geperst met een traditionele mandpers. Ongeveer de helft van de druiven wordt ontsteeld, de andere helft volledige trossen. Spontane vergisting, 18 maanden houtrijping in 300L en 500L vaten en 4 220L glazen WineGlobes.

Sited just below the Clos des Mouches in Beaune and next to the Grand Clos des Epenots in Pommard. 80% 350-litre barrels, 20% glass globes. Whole-bunch spice really punchy here, aromas very pronounced, quite a contrast to the featherlight finesse of the Bourgogne Côte d’Or and Savigny. Lots of ripe raspberry and cherry. Real intensity and breadth, driven on by the fine, zesty acidity all the way to the finish. (MH)
